Asian Salsa Recipe #1: Roasted Eggplant  Salsa

Ingredients:
2 medium Asian eggplants
8 garlic cloves, unpeeled
3 fresh banana peppers
3 medium shallots, unpeeled
1  1/2 tablespoons fresh lime juice
1 tablespoon fish sauce
3 tablespoons fresh cilantro leaves

Preparation:
1. Preheat oven to 400°.
2. Pierce eggplants with a fork, and place on a baking sheet. Bake at 400° for 22 minutes or until eggplants are very tender. Cool to room temperature.
3. Heat a medium cast-iron skillet over medium-high heat. Add garlic, peppers, and shallots; cook for 15 minutes or until skins are blackened and shallots are tender, turning vegetables occasionally to blacken evenly. Cool 10 minutes.
4. Cut eggplants in half lengthwise; scoop out pulp with a spoon. Discard skins; place eggplant pulp in a food processor. Peel shallots and garlic; discard skins. Add garlic pulp and shallots to eggplants. Stem and seed peppers; add to eggplant mixture. Add juice and fish sauce; pulse 10 times or until finely chopped. Stir in 2 tablespoons cilantro; sprinkle remaining cilantro over dish.

Asian Salsa Recipe #2: Mexi-Asian Salsa

A wonderful fusion dish with advanced and complex taste; very easy to make. Great on seared Ahi Tuna or Asian-flavored fish tacos.

Ingredients:
1 (8 ounce) package fresh pico de gallo
1 teaspoon teriyaki sauce or marinade
2 teaspoons soy sauce
1 pinch of dry ginger
juice of 1/2 lime
1/4 cup cilantro
1 Thai chile, minced

Preparation:
Combine all ingredients in a small mixing bowl, and chill for 1 hour.

For the fish:
1. Place a tuna steak in a shallow dish with the teriyaki marinade and allow to marinate for about 10 minutes on each side.Place a grill pan on the stove and preheat on high. Spray with nonstick cooking spray and sear the Ahi steak, about 1 minute on each side.
2. Spread the salsa across a serving dish, and thinly slice the Ahi Tuna, placing it over the salsa. Garnish with cilantro sprig and lime wedges.
3. Enjoy!

Asian Salsa Recipe #3: Asian Style Onion Salsa

Ingredients:
1 tablespoon sesame seeds
2 tablespoons fresh lime juice
1 tablespoon oriental sesame seed oil
1 tablespoon low sodium soy sauce
1 teaspoon white sugar
1/8 teaspoon dried crushed red pepper flakes
1 cup finely chopped sweet onion (Vidalia or Maui)
1/3 cup thinly sliced green onion
3 tablespoons red bell peppers, chopped fine

Directions:
1. Place sesame seeds in a heavy skillet. Stir over medium heat until golden light in color. This takes about two minutes. Cool.
2. Whisk the lime juice, sesame oil, soy sauce, sugar, crushed pepper flakes in a bowl to blend.
3. Add the small diced sweet onion, green onion, red bell pepper and sesame seeds.
4. Season with salt and pepper to taste.
5. Cover and chill. Can make one hour ahead.

Ingredients:
2 bananas, peeled and thinly sliced
2 cucumbers – peeled, seeded, and diced

1 fresh red chile pepper, thinly sliced
1/4 cup lime juice
1 tablespoon fish sauce

Directions:
1. In a large bowl, mix bananas, cucumbers, mint, cilantro, ginger, and red chile pepper to make salsa.
2. In a small bowl, blend lime juice, fish sauce, and brown sugar until sugar has dissolved. Thoroughly mix into the salsa.

Great over king prawns: Bring a large saucepan of lightly salted water to a boil. Place prawns in the water, and cook 3 minutes, or until flesh is opaque. Top with the banana salsa. Yumbo.

Asian Salsa Recipe #6: Asian Salsa With Baked Wonton Chips

Ingredients:
1 cup diced cucumber
1/2 cup chopped red bell pepper
1/2 cup green onion
1/3 cup chopped cilantro
2 tablespoons light soy sauce
1 tablespoon rice vinegar
1 garlic clove
1/2 teaspoon dark sesame oil
1/4 teaspoon dried red pepper flakes

Combine ingredients and chill.

For the chips:
1 tablespoon light soy sauce
2 teaspoons canola oil
1/2 teaspoon sugar
1/4 teaspoon garlic salt
12 wonton wrappers

Directions:
1. Preheat oven to 375, combine soy sauce, sugar, garlic salt and oil in a small bowl.
2. Cut each wrapper diagonally in half; place on lightly greased cookie sheet.
3. Brush soy sauce mixture on both sides; bake 4-6 minutes until lightly browned.
